RESEARCH
Dr. Martini's research expertise is centered on food science, lipid chemistry, and food material science, with a particular focus on the physicochemical properties of fats and oils, crystallization phenomena, food structure-function relationships, and the impact of processing technologies on food quality. Her work has advanced understanding of lipid crystallization, phase transitions, emulsion systems, ultrasound-assisted food processing, and the interactions between food microstructure, functionality, and sensory perception. She has also contributed to research on meat quality, dairy systems, edible fats, and the development of healthier and more sustainable food products.
