Mallory Van Haute

Mallory Van Haute, MS

Mallory Van Haute is a Ph.D. candidate researching the relationship between diet and the human gut microbiome. Her doctoral work focuses on the discovery of components in common bean that influence the human gut microbiome. She also works in the Benson Laboratory as a Laboratory Manger. She received a B.A. in Biology from Hastings College and a M.S. in Food Science and Technology from the University of Nebraska-Lincoln. Her interests are gut microbiology, food microbiology and food safety. In her spare time, Mallory enjoys spending time with her family and playing and watching sports.

Bio
Willow come from China and got her bachelor's degree from University of Nebraska-Lincoln cooperated with Northwest Agriculture and Forest University. She is a master's student of food science and technology in UNL now.

Jagrani Minj, PhD

I have graduated from ICAR- National Dairy Research Institute Karnal Haryana, INDIA. I have worked as a Post-doc for one and half a year on “Mitigation of high cholesterol and intestinal stress caused by a high saturated fat diet by red sorghum whole kernels” under Dr. Vicki Schlegel in the Department of Food Science and Technology, University of Nebraska Lincoln.

Currently working on the project “Determining the link between dietary fiber intake and metabolism by gut bacteria”. Here we are looking for how the dietary fiber enriched crackers could alter the gut microbial composition and gut microbially produced metabolites such as short chain fatty acids (acetate, butyrate, propionate etc.).

Sviatoslav Navrotskyi

Hollman Andres Motta Romero, MS

Hollman is a Agro-industrial production engineer and current Ph.D. student in the department of food science and technology at UNL. His research interest is food safety. Currently, his work focuses on strategies to mitigate the contamination of wheat grains with human pathogens and heavy metals. During his free time, he enjoys soccer, rock climbing, and baking.

Marissa Behounek

Marissa Behounek is from Omaha, NE. She graduated with her bachelor's at the College of Saint Benedict in Chemistry. Her master’s project focuses on the bioavailability of cadmium in wheat flour after fermentation and the effect of cadmium on gut health. Marissa’s hobbies include being active, reading novels, and experimenting in the kitchen

Bio:
Second year Master's student and Graduate Research Assistant in the Department of Food Science and Technology at University of Nebraska-Lincoln (UNL). Graduated from Iowa State University with Bachelor's of Science, Dietetics.

Research:
Research focus on gut bacteria community metabolism and response to whole wheat, bean, and proteins through  digestion and in vitro fermentation. Currently working on the identification of potential microbes associated with fermented non-digestible carbohydrates.
